Right now, basic courses are a good start.
I am sure environmental studies will become more and more important. There is demand for people in this field now, and it should be a growth industry.
Creative Writing isn't a bad plan, authors still make money (but you have to have the talent for it.) Photography doesn't really pay well unless you are a photo journalist or a wedding photographer, and both have drawbacks.
I suggest the environmental courses, with a couple of buisness classes thrown in for good measure.
