Right now I am putting away a couple trays of fresh home made ravioli that my mother made (her specialty), they are going into the freezer and we will eat them a couple weeks down the road. My mother sent me a couple of trays which she always makes this time of the year.

Right now I believe they are filled with seasoned ground beef. Lightly stuffed, small sized ravioli. It really is the home-made pasta that makes them so good. Sometimes she would put a touch of spinach mixed with the ground beef, but lately it is just straight ground beef. She also made a cheese version in the past as some of our family members were vegetarians, the meat version was always best. As a kid I would steal a couple and eat them raw as my mother would make them, I liked raw dough and still do. lol
I prefer the beef filling over most others for ravioli I think it compliments the pasta best. I've had it filled with crabmeat or lobster and it is usually a hit or a miss. When my sister still lived in R.i. sometimes she would get me ravioli for my birthday or Christmas from a place in Providence called venda ravioli. www.vendaraviolistore.com As for eating raw dough I have had raw cookie dough but never tried any other kind of raw dough.

That food store looks good, the Crotonese cheese looks so good, I haven't had that for years. They have many varieties of ravioli , I prefer the basics as you noted, I like the smaller sized too, not jumbo ravs.
