Texas, Arizona, New Mexico have some really amazing natural parks to visit that we should talk about along the southern route. Carlsbad Cavern, Painted Desert, Grand Canyon, ...
Given time constraints, you'll probably want to skip Oklahoma. Might also want to do Sedona rather than Phoenix (though I've never made it so Phoenix). There's this AWESOME drive into Sedona from the north (Flagstaff) that'll be great!

james- do you HAVE to speak japanese to get by in tokyo? i was thinking of going there w/ my GF, along with korea and hong kong... just one big asia trip... i talk chinese, my gf korean, but i dont know if i can get by in tokyo

I just meant you can get by just by pointing a lot. As long as you're not allergic to anything, you won't get sick from eating what they bring you and you won't have to spend your trip like this ->
