Current setup:
Edelbrock Performer RPM aluminum intake + Holley 750 Dominator (#73/#73 jets)

+

Dual Quad setup:
Edelbrock Performer RPM Dual Quad aluminum intake + 2x Holley 4150HP 600 (de-jetted)

+

I could sell my intake/carb for about $650, and the new intake/carbs would run $1500.

I guess my question would be, is it worth the extra money for whatever power (if any) the dual-quad setup will afford? I make a lot of power for an all-motor 383, so is a dual-quad really worth the extra tuning? I already have to adjust my carb every week or so...

I guess the main appeal of the dual-quad is purely looks, but then again, I never pop the hood for anybody, so what's the point?

nope, it's a small block chevrolet edelbrock intake, promise

I wouldn't go that big. The concept the you need big carbs for big power has never really impressed me. 850 CFM will can handle enough flow for close to 1000 hp. I wish I still had my reading material about carb sizes. If I had a dual setup I'd go with small carbs, something about 600-800 CFM total for the 383.

My personal preference though for a fancy multicarb setup is 4x2 weber setup, or just stick with a nice single
