jet skiing
Indian Rocks beach thru John's pass and back up to Clearwater beach is nice.
If you want a nice combination of both fresh and salt water ... Crystal River and King's Bay. Manatee refuge and several nice waterfront restaurants. Taking a ride out to Shell Island is cool and can be alot of fun if you like jumping your jetski thanks to all the waves created by the large fishing boats.
For freshwater the central florida lakes are hard to beat. I'm in Ocala and spend most of my water days out on Lake Weir. There are 2 places to eat ... my favorite is Gator Joe's (http://www.gatorjoes.biz/).
I also like going to the St. John's river and usually drop in at Astor Park (http://www.blackwaterinn.com/). Heading north into Lake George is amazing with all the natural wildlife. If you look West you will first see Silver Glen (http://www.dep.state.fl.us/springs/l...silverglen.htm). Really nice freshwater springs which is known for boats anchoring together and partying for DAYS (especially Labor Day weekend).
With the right 4WD vehicle you can drop in right on Cresent Beach (http://www.city-data.com/city/Cresce...h-Florida.html) which offers access to the Matanzas river (intercostal) and Atlantic (great waves!). It may be a little too far for a day trip because it's just south of St. Augustine. Makes for a nice water trip to drive up in downtown St. Augustine and the old spanish fort.
Hope that helps ... just let me know if you need more info! I like the water just a little bit

I have a HONDA (of course) ... Auquatrax F12x .... yep, 1235cc intercooled Turbo!! Purchased new and now 185 hours on her and absolutely NO problems. She's getting a little sluggish but nothing that a rebuild and boost upgrade can't cure!

Unless you REALLY enjoy hot-dogging 99% of the time ... go with the F rather than the R. The hull lengths are almost identical with the same powerplant.
I can pack all kinds of stuff in/on my ski and it's really nice to just turn around and lay on it (like a lounge chair!) in the middle of the lake.
I know a bunch of folks with '2 seater' ski's and they are fun ... but suffer a lot of stability and storage.
I have so much fun on mine still and can toss it easily. Obviously I'm estatic with mine ... sorry for being so biased.

Mine already has 50 hours on it, plus it has a boost upgrade so now I'm at about 185-190 hp.
Did you try changing the plugs on yours? Might be the cause of the sluggishness. The plugs tend to go band quickly on these as they are mapped very rich.

Yeah, I've been wanting a honda ski for a while now, kinda hard without having a vehicle to tow (hopefully getting a ridgeline or new tacoma sometime soon). I was gonna go with the R-12x two seater version, glad to hear you like it!

You can tow a ski with the S, someone down in S. Florida did for awhile. Granted I tow my with my 4Runner.
