There is a trick to it or at least some tips:
first click from the floor is usually a direct center hit and creates that fwap! sound effect. each time you do a center hit, it makes that sound and the ball goes straight up, so try to keep your mouse in line with the center of the ball.
if you do get the ball going all nutso, chase the ball with the mouse and click on it as fast as possible. A lucky hit will straighten the ball out and allow you to recover a decent volley.
