The oil catch tank serves as a oil seperator in the PCV line. The PCV valve is in the valve cover, It's essentially a check valve, that opens when Vacuum is applied. PCV stands for positive crankcase ventilation. In the Bad old days, the crankcase vapor was released to the atmostspere threw open breather elements in the valve cover. Around 66 manufacturers started using PCV valves to evacuate the crankcase, and burn the vapors in the engine. along with air, oil is in the crankcase vapor. Oil catch tanks seperate the oil by using baffles/filters. This keeps the oil out of the intake manifold. Most of the track guys tend to run them and fill 'em up wiith in a few track sessions.
As far as the rest of the car, The sig pretty much says it all.

Dumb question, but what do you then do with the oil? It seems that if it's clean, and it should be, you cold put a line on the bottom of the tank and return it to the engine - with a manually operated valve, of course.
