As for the filler we were told to get some grout and then seal it with a high gloss sealer from the guy at Lowe's so we bought it and now its just waiting to get finished.

This type of project will look much better at with an epoxy resin...It will be smooth, clear, and easy to clean too.

... I tend to agree w/ stlvtec: grout will be a bear to get in & around all those caps, is going to be uneven, & will leave you looking at just the cap-tops - not sure if that's the look your're going for... 
Have you tried it with a couple of caps on a scrap piece of wood to get a feel for the effect before hitting the whole bar top?
Of course, as Doug said, we'll all expect an invite over to christen the bar once you're done ... before even
The Apoxy resin sounds more like what I had pictured in my head... Is it hard to do?? And anytime you all want to have a S2Ki drinking party let me know. I'm always down for some beer consumption.
