If Jeff were referring to the knee of multiple bees, then the apostrophe would follow the "s" to show ownership of all the bees. If a single bee had possession of knees(which I'm not quite sure they have), his/her ownership would be shown as "bee's."

im jynxing myself for bragging about it... but I got my schedule for the march-may with the new job...

and im flying less in that amount of time than I did last month with this job.
