The Preparation:
  • Cut your onion like so
  • Then cut it the other direction to get chopped onion without the hassle
  • Cut the top off the pepper (hi2u underexposure)
  • Start heating up the butter/EVOO
  • Clockwise from top left: Garlic, Onion, Shallot, Pepper, Mushroom, Green Onion
  • Butter should be nice and warm now (careful not to burn it)
  • Throw the peppers in there and stir em around a bit, then crack 3 eggs and start whisking
  • Add the onion after the peppers start to soften
  • After the onion starts to brown, add mushrooms and green onion
  • BAM! (add garlic and shallot)

The Preparation (cont'd):
  • After garlic starts to turn golden, give the eggs a quick whisk and pour them in
  • Turn the heat up a bit and cut some OMG TOMATO!!!
  • Add [lots of] cheese. Try to flip it cleanly. Fail. Throw some tomato on there, I added a little more butter, not necessary
  • Give the cheese some time to melt and the tomatoes to get a quick heating/sautee, then transfer it to a plate. Throw more cheese, the reserved green onion and tomato on top. EAT THAT SHIT!!
  • The aftermath

edit: i didnt use the celery, salsa or ham. celery and ham wouldve been good, though. glad i passed on the salsa.

I know how bad it can get...we stopped by a restaurant up in Idyllwild for breakfast and I ordered this omelet. This bastard had 4 eggs and everything imaginable in it, bacon, ham, sausage, half a million different kinds of cheese etc. This thing was HUGE but DELICIOUS...With each bite you knew you were one step closer to the grave, but really didn't care
