Two weeks in the Caribbean :)
Just got back a couple of hours ago, and I'm already regretting not hopping back on the boat for another two weeks. Went with Celebrity this time, but I think we'll try something different next time... nasty case of Norovirus was going around after a few days, which meant everyone (who wasn't sick) spent the rest of the cruise asking for every little frikkin' thing to be done for them by a crew member (yeah... ever wait in line to have someone sprinkle salt on your plate?) so no one would touch anything and spread it further. I rated the food between fair/good, but not "excellent" as any cruise would hope for. Thank God we had fun, else I would have gone postal on someone's ass for providing such a lackluster diet.

My parental units are looking at a cruise of the Chinese coast... probably in another two years. I'll join if I can afford to take the time off.

If you have the money, I've heard that Crystal cruises are one of the best out there. I sent my parents on a Crystal cruise a few years ago and they loved everything about it.
I went on Princess this past summer on a 10-day Caribbean cruise on one of Princess's larger ships and I wasn't very impressed. I thought the food overall was good but the service was not very good. The few folks I met that did provide good service stood out like crazy but there were many problems like insufficient seating at the buffets (and wait staff did nothing to help you find a table while you're holding a plate full of food). Staff that rarely if ever said "thanks" or "your welcome" and long lines at the "Anytime Dining" tables when there were obviously open tables (due to Princess not wanting to overwhelm wait staff).
It was "off season" -- (apparently June is off season) - so it maybe that there were a lot of staff that were on vacation and so they were understaffed or working with less experienced staff. I would try Princess again, but I think I would avoid their larger ships. A friend of mine is going on Princess in December on another humongous ship so I'll see what his experience s.
Carnival despite being more family-oriented had better service and their new attitude towards improving their food quality definitely shows.
