I can't give you specifics right now, but I'd look to follow a good portion of Route 66. Avoid getting too far into Kansas, unless you do your best driving while asleep. Just my .02.
Others that know the area better will hopefully chime in.

Heeeey! Can't believe i missed this post. I lived in Jackson for a couple of years and even road out Katrina in Biloxi. I'll take a look at a map and give you some ideas. There are certainly some good roads through Missouri.

^^^ Biloxi's come back together since Katrina. You still see debris around the town and whatnot, but a lot has been rebuilt and redeveloped.
i'll be traveling through from Colorado springs, and down towards Ozark national park.
