It can never work, just like a NY "style" deli can never work out here, or in LA, or anywhere not in NY. It's because the network of "stuff" to support those efforts doesn't exist. Shipping everything in is expensive and gives you absolutely zero control over quality.

I also heard that the water is different, so when making the ingredients it will turn out with a different taste. I've heard that about Jersey Mike Sub shop.

Sure, just like taking a Mexican guy and putting him and his restaurant in NYC...the Mexican food there sucks. He can't go to the local market and pick up his spices etc.
