Elda bar got around this using the same mounting behind the bulkhead that you're doing by angling the bar forward drastically to get it high and keeping the top working. Elda was critizied for this and subsequently ceased production. It morphed GLF then into what is now the Hard Dog, without the forward lean and behind the bulkhead mounting.
I like your creativity in putting together a finished cabin cover bar. The compromises caused by the Honda's top and cabin make for a real challenge.
You're on the right track and applaud your creativity.
