I'm pretty sure that there isn't an idiomatic phrase in Latin for "Never Satisfied". There are other word combinations/phrases you can get that mean the same thing, but their literal translations may be different.

I just remembered it over time, dusted up on it a bit in college. I would have majored in Classics if the degree was worth anything .

Essentially, what you know ahead of time gives you the ability to never be surprised.

It's about the only Latin I know, aside from "status quo" and "per se".
