You probably buy your meat at the grocery store. I buy my meat at a local butcher -- and a good one at that.

Ask around in most cities there is a subculture of butcher fanatics who can lead you to a good local shop.
In NY, there are only a handful of good butchers. Costco and them put them all out of business. The majority of the public doesnt care about perfect marbling, so they get their meat at the supermarket. Butchers cannot survive on the rare customer that wants the perfect steak.

I agree, that if you were to go the distance, you can make a steakhouse quality steak at home, but more often than not, its a hassle.

I'd tend to agree with that, too. I haven't traveled the world searching for good steak, but I've eaten at a lot of the larger chains of steakhouses. I still like homemeade the best. It's not that hard to get a better cut of meat than at the grocery store; Just go to a small, local butcher.

last week, a table of us spent $850?ish at n9ne steakhouse. $500 of that was for the wine/the room/ambience/hot hostesses in skin tight dresses. it was good, heck, it was probably better than ruth chris' good, but it wasn't no $850 good...

for the NYers, who's been to peter luger's?

Lugers is good but the one on Broadway in Brooklyn sometimes smells bad on the outside. They also have another location on LI?

So anybody been to Texas de Brazile? A bit pricy but it's all you can it. Every possible kinds of steaks are there...waiters and waitresss with skews full of meat just keep on coming and coming. After about 8 rounds, I'm done but I've seen others do A LOT better . PS. I would skip the salad bar and other useless chit and just go right to MEAT!!

Texas de Brazil.
