when cooking with eggs, even so much as making cookies, why was I always told once you add the eggs, only stir one way?

No that is correct in some contexts. For some recipies you do not want to interduce air into the eggs.

Depending on which hemisphere you're in, you beat it the opposite direction of which your drain flows. That way the whites and yolks get mixed thoroughly. If you go with the pull of natural forces then you really aren't mixing it.
