when cooking with eggs, even so much as making cookies, why was I always told once you add the eggs, only stir one way?

anyone know? or some myth?

No that is correct in some contexts. For some recipies you do not want to interduce air into the eggs.

But the mincore way of doing things is a great way to make light scrambled eggs.

For omelette or scrambled eggs, I always use a mini-whisk, and beat the living sh*t out of the little fokker.

Depending on which hemisphere you're in, you beat it the opposite direction of which your drain flows. That way the whites and yolks get mixed thoroughly. If you go with the pull of natural forces then you really aren't mixing it.

*I really have no idea. I just know that it's more natural to go one way than the other.*
