Kicking around the idea of removing the flat wood center panels and replacing it with the tatting style of glass. This would be for the upper cabinets only but there are a lot of doors. Do you think that this is to much glass?

No. Although you could try doing the 45 degree corner cabinet, and the one above the oven first and then see if you like them as accents or want to go further.
Yeah, I would use them as accents. Either side of the oven, then maybe a pair in the middle of the row of cabinets on the left to break up the monotony, or on the ends to act as bookends.

I agree. I would use as accents only. I had the option of some glass front cabinets when we re-did our kitchen and I decided against them.
The ones you show look good.....no one can see the mess behind the door.
