See "O". It is expensive but worth it. There is a reason that show has been running for over a decade.
I did rent an S2000 once at "Rent a Vette" in Vegas but they only keep cars under warranty so I doubt they have any. Probably have something fun that is not too expensive for a few days.
I like to have dinner someplace up high with a view. There are several. I think the one I enjoyed the most was down in the ghetto at the Stratosphere. The food is considered on the better side of average but my meal was very good. It is a revolving restaurant, which is a little cliche, but get the reservation for about dusk, they seat you facing the strip, and when you come back around towards the desert course, it is dark and the strip is all lit up. It is out of the way, but like every casino, parking is free so if you have a car, no worries. I might be giving the restaurant too many props because I was with a large group and we really had fun, but they have a nice wide panorama view and they priced not too bad with decent food. There are nicer views with better food, but prices go up drastically.
Or you can just have cocktails at Mix on the top of Mandalay. I think all of the rooftop joints have high cover charges, and since I have not been in a few years, I don't know which one has the "in crowd", but most of the time the not so in crowd is more fun and less douche-tastic.

If you want views, nearly every hotel has something at or near the top - just do a little searching online. Another great place with a fun view is Oscar's inside The Plaza (downtown). They're up on the 3rd/4th floor mezzanine, but you get a great view of all the people staggering up and down Fremont St. Downtown.
. . . related, I can't say enough about the renovation downtown. Most of the big hotels are on The Strip, but if you get a chance, try some of the smaller, independently-owned establishments in both The Arts District and Downtown.
I go to Vegas for work a few times a year and I'm over the "Vegas" strip but I would recommend the following:
Eat at the MIX on top of The Hotel - awesome views and great food, but you pay for it. Easily $100-150 per person. Or you can just go to the outdoor patio and drink. Sometimes they require a "VIP" pass but it's easy to get, or get around.
Ferrari showroom at the Wynn
O - it's worth the money. If you're more risqué, see Zumanity. Or the Beatles show (haven't seen it in person, just on video)
Bryce Canyon, Zion Park or even Red Rocks just outside of Vegas for hiking and nature. Zion IS WORTH THE DRIVE
If you like rides the coaster at NY NY is fun as well as the Big Shot on the Stratosphere

oh god you're staying at circus circus, if you dont have kids I would suggest staying elsewhere. We stayed at circus circus the last time we were in vegas and vowed to never stay there again. The room was ok but having all of those kids running around the hotel and most of them were very rude(trying to enter a packed elavator before anyone on the elavator could get off)type of rudeness and not watching where they are going while texting. If you have kids then be my guest as you are used to having kids around and dont mind other people's kids, plus they have a small amusement park inside the hotel.
while there i would suggest renting a car to get around, Death Valley is about an hourish west, red Rock Canyon is good for hiking, take the Damn Dam tour while there, the grand canyon is 4 hours away with the metoer crater national park not too for past the grand canyon. Other places in vegas to visit are Freemont Street(the original part of Vegas) and I would suggest seeing the Boneyard, it's where they keep all of the original vegas hotel signage while they try to restore some of them.
There are a few tv shows on the history channel that are based out of Vegas, Pawn Stars, American Restoration and Count's Customs(Count has a bar and a car musuem you can visit)so they might interest you. as mentioned before, The owner of the Wynn Hotel has the only Ferrari dealer in Nevada, the cost to see said cars was $10 the last I went there. other places of interest if you like cars: http://autocollections.com/ http://themobmuseum.org/
