well I can't be of much help on what bikes to buy (I freeride so weight and pedaling ability are low on my list) but here is a good site to look at reviews for any bikes your looking to buy http://www.mtbr.com/reviews/

I don't see the point of full suspension if you don't plan to do big jumps...

I prefer lightweight.
most articles say comfort, on average they are 2lbs heavier. Jumpers actually prefer the hard tails according to the article below... looks like full suspension is better for anyone who isn't planning on a lot of climbing. Either way I'll ride a bunch of bikes and see what I like for the money... I definitely don't want a heavy bike.

My vote is also with the hardtail (for weight, ease, and cost).
I personally like Specialized bikes. Keep in mind your first bike will go through extra wear due to the learning process of riding and maintenance.

Oh... and find a nice local bike shop to buy from instead of online. It's good to have them on your side and they will take care of you.

But you really can't go wrong here. Find what you like and ride.

And when bikers drop "climbing," take it with a grain of salt. It's a real bitch sometimes!

lol yah, I don't plan on "climbing"... this will be just one more form of recreational fitness for us, girlfriend has been on a huge health kick (goes to the gym twice a day, loser!) and I'd just like to get out in nature a bit more.

Are there any must have accessories I should look at when buying a bike?

a helmet. I also prefer clip in pedals, but I think that's personal preference. Good shoes and shorts with a nice chamois are not as essential, but great to have. Comfortable gear will make a huge difference.

The thing is that if you are uncomfortable when riding, you won't ride and then it's a waste, so get good gear.

You also may want to carry an extra tube and tire changing tools and maybe a C02 inflator or a pump.

I like having a camelbak rather then bottles. The mountain biking ones fit well and don't move around when you ride.

beside what raj said, I would get riding gloves. you will fall and your hands will be protected with gloves.
I fully agree with clipless pedals - they're safer and more efficient.
you should also be self sufficient on the trail. At the very least, bring spare tube, pump, tire levers, chain tool, and allen wrench (you can also do multitool). I always stash $20 bill in the seat bag.
I would not get a full-suspension bike for less than $1500. Hard tails are lighter and simpler to maintain.

.
I forgot about the gloves. I didn't take mine the last time on a huge technical downhill and I paid the price. My ulnar nerve got beat on badly!
