Free Museums (if there are any in the area), Parks, walk on the beach. . . shit, go down to Whole Paycheck, get some of those cheeses, crackers, bread, and some vino, find a nice quiet place, and have a picnic (weather permitting). Or, better yet, tell her you were planning a picnic, but if the weather is crappy: have it at her place!
My only good ideas for singular unique gifts require WAY more than a week's lead time; so good luck.

if u need to get her a present. go to bed bath and beyond, pick up a basket there and load it up with girly shit. its cheap and girls love that shit. plus she smells all fruity which is good for u, and u can tell her u put the basket together which is thoughtfull
