What non-white language to study
If this is something you plan to stick with in the long term, then I'd also say to go with Chinese. Otherwise, if you're just going to take one class, then any of those languages would be fine because you're unlikely to learn enough to be useful.
I wouldn't worry about the various Chinese dialects. There are indeed a ton of dialects all over China but just about everyone can speak Mandarin Chinese since that's considered the official language. Folks in Taiwan and Singapore can speak it too.
But be realistic in how useful you expect this to be. Knowing Chinese can be helpful in some jobs but in many cases it doesn't make any difference at all. I speak Mandarin Chinese fluently and have never used it for work. It really depends how fluent you are and what kind of job you're after.
