Plus, the new Media Center interface is much improved over Vista's, which matters to me as all my TV's have computers on em for movie and TV show gallery access.

^ Been running Windows 7 Ultimate for a over a month maybe 2 now. My work has MSDN licenses so I got legit retail versions of 7 Ultimate 
After doing a fresh install, the only driver I had to install was my for my chipset.
Huge improvement over Vista, if your running the release candidate, Ultimate only has a few improvements over it. The only major thing I noticed is the ability to change more settings in the start menu; optimized for solid state drives, not as much of a memory hog. Faster boot & shutdown times; generally faster overall.
Somethings were finicky in Windows 7 at first; for the longest Adobe Flash wasn't working. Firefox crashed instantaneously and I had to run Minefield; but I just updated everything and its flawless.
Windows 7 isn't going to be a life changing experience. its basically what Vista should have been.
