I have a daily driver, but I've been meaning to put padding on the cage. Those previous pictures are scary, from the looks of it the Crushco roll bar held up pretty well.
I rolled my ride a couple months ago and damn am I glad that I had a roll bar in there. Just like on S2000GT's car, it was the only part of the car that wasn't tweaked up.
No padding on mine either, doubt that it would've helped that much really... can it be that much worse than rolling over in a car that has a solid metal roof and smacking your skull on that?
All that happened to my head was a little cut, no concussion or anything. I would put that bar right back into my next car, padding or not, because I am damn sure that it saved my life.
The issue about hitting the bars is not really about a roll-over event. Where it comes in to play is the fact that the vast majority of impact events are not roll-overs.
You are trading a benefit in a severe but rare crash with a liability in a probably less severe but much more common crash.
As for padding, while the proper padding will help absorb some energy, it absolutely does not substitute for wearing a helmet. The helmet and the padding do two different jobs.
These are issues that lead to different answers for different situations -- there's not one correct answer.
