I am currently using Musicmatch Jukebox to rip, organize, and burn. It's not bad, but I'm wondering if there is a better alternative out there. In particular, I find the sound levelling feature does not work as well as I would expect.

I'm using iTunes. I use both pc and mac versions. Be careful though, shopping on the iTunes store is roughly as addictive as I'd imagine crack to be...

Second vote for iTunes. It pretty much has the same feature set as MusicMatch, but it's free, easy to use and has the following unique features:
1) AAC compression support. It's essentially MP3 compression version 2, developed by the same guy who invented MP3 format originally. It has better quality for the same bitrate. Only disadvantage is using portable players that don't support the format. You can still do everything in MP3 if you want.
2) Smart playlists. Each song can be ranked (in real time) and uses multiple database tags to create playlists. For example you can create a random list of all R&B songs that are rated 4-5 out of 5 that were played more than once.
Of course it really kicks ass when used with an iPod. Auto-synchronize, iTunes store, etc. It is still very good without an iPod.
