Need help
I have enough money set aside now to go with my next electronics mod.
I have it narrowed down between 2 choices,
Choice #1
A Mayhem 900 series alphasonik sub that should be able to handle my amp in a custom fiberglass box, which will allow me to use my trunk again. Box and sub will be handled by DarkKnight1999.
Choice #2
The new JVC h/u with dvd/navigation and the molded screen, also would be ordered from DarkKnight1999.
I am having trouble deciding between the 2 choices because I would like navigation, but I would also like to use my trunk. I think Choice #2 would look cooler, but I also need to weigh the options between getting pulled over, because I can't get pulled over anymore, as it would result in a terrible situation.
So with that additional information, which would you go with? Choice #1 or Choice #2?
The other choice will be done at some point in the future as well, probably summer time. And I know that Choice #2 is going to be more expensive, I just can't afford both right now.

I spoke to the JVC rep tonight and he honestly wasn't sure if the HU will output the navi info to a secondary screen.
I did however really like the JVC KD-NX5000 what a great looking unit with so many features!

IMHO, the choice is easy based upon what you said. Go with #1. You will get your trunk back, and you won't have to worry about being pulled over (at least due to not having a rear view mirror if it is the setup I think you are referring to). Sometimes practicality outweighs coolness. 
FWIW, I have a Garmin StreetPilot 2610 that I have been using for years, and just bought a new mount that uses a suction cup to the window (Click this link to see mount at Amazon.com). I really love the ability to take my one GPS unit and use it in either of my cars. Furthermore, I am going to be purchasing one of William Laurent's subs this weekend, just so I don't loose any valuable trunk space, either; unfortunately, I have been procrastinating getting this sub for way too long (all due to my own financial priorities).

You do not "need" to have a rearview mirror by law
When was the last time you saw an 18 wheeler with one? Or an RV, or a Uhaul for that matter... its fine.
I've never had anyone question me with it. I've been pulled over and they never even mentioned it to me.

Seems like I'll be going with the sub for now until I can get some more information or until someone has the NX5000 outputting to a secondary screen, as I don't want to have to squint to see the directions.

Be careful what you say, and how you say it.... In this case, you are partially correct, but your intent/conclusion is wrong. In the state of NC, for example, you MUST have a rear view mirror INSIDE a CAR:

Its a rear view camera, its works better than the mirror in pretty much every way. I'm not removing the ability to see behind the car. I'm just using a different way to see... and see better I might add.
But as it also turns out I didn't run around and check every state law... and I don't plan to either... but you can feel free to. Have fun

All I was pointing out was that different states have different laws. YOU cannot say with any certainty that where DFW is located, or anyone else for that matter, that he would or would not "need a rearview mirror by law." Neither can I. What you should be telling people, if you get off your high horse, is to check with their local inspection stations or state DMVs for clarification. They may be able to use your setup legally; maybe they won't. That is all I am trying to say.
