I was considering:

1x
AEM 0-50 PSI (3 BAR MAP) Pressure Sensor Kit, stainless steel 30-2130-50 (to monitor boost)
This is perfect, you'll want either or 3 or 4 BAR MAP sensor, the factory won't read accurately passed about 8psi IIRC.

1x
AEM 0-150 PSI Fluid Pressure Sensor Kit, brass body 30-2131-150 (to monitor oil pressure - I have an AEM fuel rail so this will plug straight in)
This is confusing, if you're going to use the for oil pressure, it won't go into your fuel rail. You'll want to find somewhere to tap into oil pressure. I believe many people use the VTEC solenoid.

SORRY MY MISTAKE - I MEANT FUEL Pressure!

1x
AEM Water / Coolant / Oil Temperature 1/8 NPT Sensor Kit 30-2012 (to monitor oil temp - this will go in a sump adapter)
This is fine, I know a few people that use the plug adapters. They just say it can be annoying when changing oil.

I also have a Mishimoto radiator to install which also has a 1/8 NPT port for use with a temperature sensor - will this be needed since I read the AEM EMS v2 ECU works with the factory coolant gauge?
I don't think you'll need to tap into your radiator. AEM V2 uses the factory sensor and location. It should read automatically.

I have already bought the UEGO Wideband which I think is essential!
Good, you can either wire it into the AEM as another sensor or just keep it independent. AEM will use the primary o2 sensor as well.

I was going to remove the stock o2 sensor and just replace it with the UEGO wideband - is this the best thing to do or will I need to keep both?

Are these sensors easy to wire into the AEM EMS? I assume I just need to run some wire to run the cables? I plan to monitor these using an iphone/ipad app.
I've read some of them can be a pain to wire into the AEM, but you just need the scehmatics (should be on here somewhere) and some pin outs. (you can buy online)

Where is the best and more accurate place to T into for boost?
You don't need to T into boost as the AEM will read off the MAP sensor. Unless you want to add a mechanical boost gauge, you won't T anything.

Honestly, with a wideband, oil pressure, and oil temp, you'll be good to go.
So if the AEM v2 will read boost off the MAP sensor then there seems little point in getting a seperate boost sensor?

Think all I will need then is:

Oil Temp
Oil Pressure
and Wideband.

These are really the only things you need for a supercharged setup and be able to monitor the essentials.

If I were you. I'd keep the primary O2 sensor in, remove the secondary and put the UEGO there.

You don't need a separate boost sensor.
