Default Coolant temp low?

I've have done some searching and was just looking for some feedback. I have a vortech with stock pulley rc550 and 1052U tuned. I have a mugen thermostat and fan switch installed. They were installed years ago when I was NA.

Since i can now monitor my coolant temps via my serial gauge and there have been some cooler mornings here where I live in Ontario Canada I have been seeing coolant temps around 156F to 163F. On hot summer days the ECT is 161 to 171F

Is the engine running too cool? Should I put in an OEM thermostat?
Any feedback is appreciated.

The car will see roughly 3-5 track days a year. Car is not my DD.

It is. I have the modifry ECT module too and it reads 2 bars and sometimes drops back to 1 bar if I'm coasting to a stop. 2 bar turns on at 160F which confirms my serial gauge values.
During summer months the dash gauge is always 2 bars (160-175F). Only during cool fall/spring days the gauge drops to 1 bar sometimes ie coasting down an off ramp of a highway. Once on the gas again it goes back to 2 bars within a minute or two.

wow your temps are really low. maybe you should put in your stock thermostat again. Vortech doesnt really need racing thermostat and fan switch. I'm turbo with the mishimoto fan switch and thermostat and around town my temps are usually between 170-180 summer its 180-195, and 190-215 when drivng really hard in a canyon or something

Ok thanks guys. I'm going to try my stock thermostat for now and maybe upgrade the rad to keep those temps consistent on hot days and spirited driving

I just got a reply from my tuner and ideally I should be around 170-190F so the stock thermostat is going back in for now. I was also told that my tune will be fine with this temperature change.

How is your Mishimoto fan switch if you don't mind me asking? I wanted to get one but the Mugen switch is just $11 dollars more.
