the oil pressure gauge can be a stand alone, right? meaning, it doesn't need to be hooked up to the EMS to get a reading...

Correct.
You just need to tap into an oil source. I definitely recommend going with a Greddy oil filter block adapter to tap into for the oil pressure sender unless you are doing an oil filter relocation then can tap in along the line somewhere.

check out STRI gauges, my oil pressure gauge is hooked directly up to my oil filter housing, will post a pic

boost gauge and AFR are certainly useful, the rest are what I classify as paranoia gauges.

Take oil pressure for example, a sudden drop in oil pressure is going to send your CEL freaky anyway. Also oil pressure isn't really effected by oil level, not until your so low as to be SOL anyway. Oil temp makes much more sense in my opinion.

An oil TEMP gauge however would be very useful. When your oil level is low the oil gets hotter. It'll also let you know when you've been pushing the car to hard and need to chill out.

Water temp, why? I don't about you guys but I have a temp thing sitting just to right of my speedometer and just above the fuel gauge . I know where it usually reads, if it goes up I'd probably be curious at the least If it was just an idiot light I'd agree, but its not.
