Red Interior vs Black Interior
When I bought my S, I really wanted a red interior for the bling factor and to contrast with the Silverstone exterior. But I just couldn't get past the red dash and center console looking, well, chintzy. So I went with the black interior and immediately looked into re-upholstering the seats in red leather. I never got around to it, and honestly at this point I like the all-black interior just fine.
I'd suggest finding somebody local with a black interior and swapping pieces until you both feel like you got the better end of the deal. That, or keep your classic rare interior as is.

All colors and color combos look great on other peoples cars. For me, I like a totally blacked-out cockpit. I like the black-out look so much I ordered and installed the Clazzios in all black to cover my black OEM's. An advantage of the Clazzios is they are even blacker that the OEM's wich I now consider to be a dark charcoal.
The den/cave effect of all black results in a more relaxed state of mind at the end of a long drive IMO.. Add to this, tinted windows as dark as the law allows.
