if you can easily brake them bolting them down, your gonna have a bad time if you crash your car

This may sound stupid, but why not keep the OEM seat bolts in place, then just round off the bolt head? It would be a bitch to remove in the future, but at least you know you aren't compromising safety by replacing with a weaker bolt.

I just came across these, and they seem ideal for this job.

Unlike other vendors, this one sells packages as small as 5 pieces.

So, one 5 pack of M8 x 25mm, plus one 5 pack of M10 x 20mm should do it.

I can buy washers locally.

I am going to contact the seller to see if they will combine shipping, as the shipping from the UK is more than the bolts.

Also, I need to verify that the thread pitch is 1.25
