Default Coolant temp problems on track

I ran my first track event this past weekend with the new motor and pegged my
defi water temp gauge after two laps at sebring. Car started sputtering before I noticed the temp issue and I brought it off track to cool down - car runs fine after it cools down and even cruising on highway it still runs around 100 - 110 c water temps - I am going to remove my thermostat to see if it is bad.
Water Temp 120 + celsius (248 F)
oil Temps peaking at 88 c (190 f)
oil pressure peaking at 7.2 (104 psi)
EGT at 8 (1472 f)

Something is wrong, I am running way too hot in the coolant temp with a Spearco radiator and FAL fans that operate correctly - any help or advice would be appreciated!

That is hot. Most I think I've ever seen on the track is 221 F. What's your ratio of coolant to water?

Do you still only have three bars on your factory coolant gauge?

Nobody, AEM EMS - OEM gauge doesn't work and my street temps were hotter then I diluted the original ratio of 50/50 with distilled water and watter wetter and that brought down my temps about 15 degrees F before the track event.

Krazik, I burped the hell out of the system after the radiator install with the heater on the bleeder valve on the valve cover and the heater tube against the firewall - It was running hot before I put the spearco radiator in it! The engine installer suggested to remove the Thermostat to see if it is malfunctioning.

I have done mant track days this was just the first with the new Alaniz motor! I know it should run hotter than OEM bacause of the HP increase but something is majorly wrong! thanks for the help
Also, I don't know the flow of the coolant - but the water temp sensor is located right before the coolant goes into the Oil/Water sandwich adapter beneath the filter location!

then yes, if the thermo isn't opening or opening fully it would make you run hot. 240 is way hot.

It was operating correctly before my new motor was installed - I am wondering if it was installed incorrectly or was damaged during the install! do you think removing it will give me an answer - I hope it is that simple, How do my other temps/pressure look since you have so much track experience? thanks in advance.

Oil pressure looks high IMO. I would think more like 75-85 psi.
Could be due to the re-routing though.

Do you mean 220 deg F oil temp. vs 120F?
220F is very reasonable for what you have going on. Assuming this is with the oil cooler...I doubt you would run that cool without the cooler.

Where is the oil temp sensor located?

88C doesn't sound right. That's not even up to operating temperature yet.
