HPDE Initial Set-up for best performance
Thanks, everyone! I typically trailer the car to the track in case I have any mechanical issues. So it makes sense to have a separate set of track wheels and tires.
It looks like I can get a set of Enkei RPF1 (17x7.5 front, 17x9 rear) for under $1,200. Good weight at less than 16lbs each. Combined with the Kumho V730's and Carbotech pads, it should be a great first season back in the seat of the S2000. Probably going to feel a little different than the 2024 Z06!

I won't speak to the quality of competitors wheels, but I will say that if cost is a concern, we're still offering a pre-order discount for our Flow Formed VS-5 where you could pick up a set of the 17x9.5" ET51 for right around $1,400 shipped! Just something to keep in mind.
Also, since OP is intending this for track use, it's good to note that APEX has a 50% off wheel replacement program. Track wheels get beat up, bent, and cracked all the time, not an if, but a when.

This is the deal to get.

This is really helpful. Ok... So, I don't want to roll the fenders or make body modification. Also, I appreciate the advice about good pads vs. a BBK, so I'll plan to avoid the BBK. With that, could I get some recommendations on a good set of wheels that won't break the bank and keep the stock staggered sizes? Thanks!

or there's a set posted in the forums too.

You could actually also get the apex 17x9 +61 wheels and mount 225/255 staggered tires on them. It will be at the limit of functionally stretched up front, which will help with responsiveness and feel, which is beneficial up to a point. ASMotorsport stretches a 255 on a 10.5 wide wheel, so this is within a similar amount of stretch.
