i need to take my car on the track, buy want some info on what minimum requirement roll bar i need and if you have to remove the factory roll bar, and if the seat won't go back all the way, with an aftermarket.

There isn't just one answer to your question. Different organizations and different tracks have their own requirements. You need to ask the people who are running the track event what their requirements are.
Some events do not require a roll bar.
