Thanks guys, this is exactly the type of advice I was looking for. TTC it looks like. I feel like I need a freaking lawyer when I read the NASA rules regarding points.
call me crazy but I find trying to figure out the combination of points that would work out best for me is sort of fun. (At least more fun than scca giving me a short list all the stuff I can and have to do to be competitive).

Start off with calculating what you already have on your car (if anything). Then look up the stuff you think will yield the best results (tires, suspension). Then figure out how many points you have left and pick and choose. Repeat as necessary

Yes. at least for my region and tracks. I imagine certain tracks can have their own restrictions.

Depends on the track but either way I would install a hard dog roll bar.

...and would be better off focusing on a TTC build, giving you 39 points to play with on a base of 255 tires like Rene said.
Wouldn't an AP2 only be allowed 19 points to stay in TTC?

AP1s get 39 to play with to stay in TTC (this 39 must include the 14 for the base TTD** classification).

I know I should do a roll bar. Here is my dilemma- I am 6' 2" longish arms and torso so I am concerned with my seat position in relation to how close I am to the steering wheel. All the pics I see with the HD bar the seat is forward. So If I take out the roll hoops and gain seat space now I would think its best to have a custom roll cage put in and this also means sacraficing the top and going to a hard top.

If I was very confident I could put in a HD bar and install a new seat and be happy with the driving position I would do it tomorrow.

I would go with a racing seat, on the floor. The Hard Dog bar allows you to go pretty far back - not sure if you could go any farther back with a custom. Most custom setups allow a bit less room since they mount to the floorpan.
Either way though, roll bar is pretty necessary given the rinky dink stock hoops.

Im actually in the process of getting my car ready for a Hard Dog, Ordered it on monday should be here by the end of the month. Ill try and post pics tonight of how the car looks.

Alot of clubs in FL don't allow the s2000 to run unless they have an SCCA approved bar or cage, just cuz the stock hoops don't cut it.

One of the reason's im doing it, The other reason is for more saftey. I have a HANS and want to use it while running TT or any track session really.

So I would do the bar, you don't take points for it and will increase safety just a lil more.

Have fun with mounting a properly mounting a harness with the Hard Dog if you are also retaining the OEM seat belts.
