I remember watching this video you posted up of a rainy Buttonwillow day and thinking your counter steering was nice and smooth. Different scenario than what the OP was asking about but still a great example of good steering in my opinion:

But I must say, every time I drive a CR or AP1, I always think that car felt great. Later I realize its the rack (or at least its a big part of it). AP2 leaves a lot to be desired when you drive quicker racks.
Here is a video on a course with some tight corners. I always try to make sure I setup before I enter the corner so my hands are all crossed up if I have to make a steering correction mid corner.

I like to keep my hands at 9 and 3. The car doesn't seem to need more steering input past 180º. Also try to slowly turn the wheel leading toward the apex. When done right you should be able to unwind the wheel the moment you clip the apex. (ie. one turning input for one corner)
