stock exhaust weighs 48 lbs.
The trunk and hood are very light (hood is aluminum) and if anything, you'll probably make the car a little heavier going with CF.
The passenger seat is around 40 lbs, so take that out when you go to the track. If you want to save more weight, remove the A/C and heater they're heavy. Next do carpet. You're not going to make the car substantially lighter just by playing with lightweight wheels and cf body panels.

You sure the stock exhaust only weighs 48 lbs? It feels like it weighs 60+ lbs.
Also the passenger seat defenitely does not feel like 40 lbs, maybe around 25-30
I have no stats, just my feeling from lifting these two items repeatedly

Passenger seat is about 35 pounds.
If you want to drop some weight. I went with a 6 pound seat which included the rail and took out the passenger side. So I saved about 50-60 pounds right there. I have 11 pound wheels so theres another 20 pounds I have saved. Softtop would be another 50 plus pounds. So right there with 3 things I have saved 130 pounds. I also swapped out my front fenders and front bumpers for lighter counterparts.

If you remove the soft top, you save 60 lbs, but then you add 40~45 lbs right back when you put on a hardtop. It's not a major way to save weight.
You'll save well over a hundred by getting rid of all the HVAC stuff. And you'll save a lot by losing the carpet. You can also drop 13 lbs by going with a racing battery. And those things won't cost you big money like $5k for a cf top to save 15 lbs, $2k for wheels to save 20 lbs, $1k for an exhaust to save 30 lbs, or $800 per seat for a fiberglass seat (with mounting hardware) that will save you under 20 lbs or $2k for a cf seat that might save you another 5 lbs.
It's all about the aggregate. Yes, any time you save weight, it's a good thing. But if you shave 40 lbs off the car and spend $10k doing it, you're getting a whole lot less bang for your buck than if you shave 200 lbs from the car for free. Be honest with yourself - you don't buy a mugen cf hardtop to save weight unless you're planning to build a Speed World Challenge car and your sponsors are willing to pay as much as possible to save every ounce. If that's not you, then you're considering buying it cuz you think it looks cool. There's nothing wrong with that, but don't lie to yourself about why you're buying it.
That said, I do have a titanium exhaust on my car for weight savings. :-) And I haven't removed my HVAC yet.
My car currently weighs in at 2700 lbs on a half-tank of gas.

None of the tracks out here let you run without a top over your head unless you have arm restraints. SCCA Honda Cup requires a hard top. And even if they didn't, the aerodynamics are so bad with the top off that you'd be slower without it than you would be with it.
Mine is 2700 because I still drive it to/from the track and most of the tracks out here are in the middle of the desert (with summer temps around 115 degrees farenheit), so AC is kinda required to survive the drive home from the track.
I've got quite a few logistical problems to work out first, but I am planning to gut the car and trailer it as a race-only car next season. From what I've seen, the car will probably weigh right about 2350 after being stripped (with a full cage).
