Default 5w20

Why would a Honda dealer recomment 5w20 vs. 10w30 motor oil called for in the s2k manual? Is it safe to use?

I wouldn't use it. I want the extra viscosity for high RPM work...

If you want less resistance and more lubricant the 5w20 would make sense, wouldn't it?

5w20 is thinner i believe, you want a thicker substance that doesnt break down as easily as the thinner oils do(especially during high rpm driving)

It would be o.k.if you drive in a very cold climate.

I thought that if you were in a colder you would still use 5w30? instead of 10w 20 that is.

10W-30 normal temps down to -20'C
5W-40 for temps below that

straight from the (EU) manual.

Not that we can buy 10W-30 here, so $tealers spec 10W-40.

5W-20 probably isn't ideal, but could work depending on the situation. Isn't that the recommened stuff for Pilots?

You are correct. All newer hondas use 5w20 so they assume the s2000 uses the same oil.
