Here's a good place to start.

ok that all just confused me. I know how to open/drain/flush/close things but I just was wondering what weights and brands everybody liked.

Here is what I use, and have had stellar results. Ive tried all the high end fluids, and these worked the best.

Motor: Amsoil 10W30 Synthetic
Trans: Amsoil MTF
Diff: LE
Clutch: ATE
Radiator:Honda
Oil Filter: Amsoil EAO20

I'd also flush the brake fluid. It absorbs water from the air, and water is corrosive to iron/steel. Any brand-name DOT3 fluid will work for the brakes and clutch. A quart(liter) is enough to do both.

Make sure you flush your coolant. MY2000 came with type1 Coolant (discontinued). You'll be replacing it with Honda type2 coolant. Flush it to be safe unless you've done it before. I agree with the above, flush/beed your clutch. Check the throttle cable for slack/deflection. Take out the slack, but not all of it. There should be between 2-4mm deflection if memory serves. Check your air filter. Good Luck

EDIT: I use:
Oil= Honda 10w-30
Oil Filter= (only)Honda PCX oil filter. Torque to 16ft lbs. or 7/8ths of a turn after the filter seats on the block. No exceptions, tight enough is not tight enough on an S2000 block.
Coolant= (only) Honda Type2
Transmission= New Honda MTF (green label)
Brakes/Clutch =Honda DOT3
Diff= LE-607 (never let the dealer provide diff fluid, Honda dosen't have one and they have screwed up more than couple times I've seen on here.)

Rubber seals= Shin Etsu (Honda sourced Silicone Grease)
