I can't seem to roll my feet over on this car so I'm learning to rotate my right heel to blip the throttle.

If your knee is interferring with the steering wheel attempting to H&T, I suggest moving the seat back.

I was always told that the seat should be far enough back so that when you FULLY depress the clutch pedal, your left leg is almost entirely straight.

...Although, I CAN relate to being cramped behind the wheel... my problem occurs during turns. I can't fully rotate the wheel with my hands in the ideal position without hitting my knees.

I bought one of those adjustable pedal kits from Levoc for about 15 bucks. I just put the brake pedal in and it works like a charm now.

The brake/gas pedal position makes it perfect for heel/toe.. maybe one of the easiest car to perform heel/toe...

I find it pretty easy to heel-toe. I usually keep my heel closer to the gas pedal when applying the brakes while getting ready to rotate and blip the throttle. Works for me.

it's nowhere near as easy to heel-toe in this car as the car I learned how to heel-toe in, but it sure as hell is alot easier than my old GT stang. As long as you're braking right it should be no problem.
