Does anyone know how to dismantle and replace the AP2 center leather armrest?

Just unscrew the arm rest section screws from the bottom of the center console, peel off the leather and thin foam layer that is glued to the arm rest and replace it with your own. There is leather, foam and leather glue available at Hobby Lobby. Using a heavier density foam at about twice the thickness of the OEM makes a nice look and feel.

Are you saying that I need to dismantle the complete center console first in order to get access to the screws from the bottom securing the armrest?

Dismantle is bit of a strong word. It comes out quite easily. Pull up from the back start with the arm rest area.

It just snaps in place. Pull up near e brake, and it just pops off. Remove shift knob first. Once it pops up, reach under to unplug wires for softop, defrost and e flasher switch. Flip over, and you have access to those screws.

Take your time and ease the clips off.

While the console cover is off take the opportunity to clean and re-grease the shifter. Photo essay and videos in the library. Be sure the shifter gets back the right way.

Adding to what Chuck S said, here a helpful video that shows how to do it and how to remove the console.
