from what i know, the weaves differ in price due to the difficulty of the manufacturing process. A friend of mine who's in the body kits business said that the 1x1 weave are the hardest to make since the small pattern it has makes it even more difficult to mold and flatten out.
Weight (thickness) of fiber is completely independent of the weave style, as both styles come in variety of weights.
When making a flat carbon fiber panel, it's stiffness vs. flexibility depends almost entirely on the final thickness, number of layers, and the orientation of each fiber layers (assuming the part is carbon fiber throughout, though they almost never are).
On a 3 dimensional part, 2x2 has more "give" in between it's weaves which allows 2x2 to wrap around corner better with less distortion, thus results in more even/consistent coverage of the fiber making the final part stronger than 1x1 counterpart.
