1 - I've seen different stock 00-03 models dyno between 180 and 200 hp, same day and same dyno. So yes, a dyno of this one particular car won't tell us particularly much about the output of the new engine.

2 - Honda's official torque curve for the 00-03 model is very different from actual dyno charts. Real-world cars have their torque peak around 6500rpm, not the 7500rpm Honda claims. So this graph will give a very good indicator of the overall shape of the torque curve - the important bit being the difference pre- and post-VTEC.

No worries there, the average variability that I've seen is less than +/-5 hp, and that's including the 00-03 models which seem to have different averages. The maximum deviation is actually closer to +/-3 hp for cars of the same model year. Its all in controlling the test variables.
