I have had my kids in car seats with me in both my old miata and the S2000. They love it and get time with me.
Honestly folks worry to god damn much these days. Is the kid strapped in properly? Are you driving like a responsible adult? If you can answer yes to both questions then have by all means, spend the time with the kids.

put a manual switch in to turn the air bag off and it's perfectly fine. same as a child in a jeep wrangler, strap em in good and go
like mentioned 06+ has the sensor (why do you think honda decided to do this anyway...)
