So after a long day of doing some service on the s2k, I lowered it without fully removing the jackstand. I heard a crunch and the resulting sight damn near brought me to tears. What are my options? Don’t really know anything about body work. Something I can order and replace, pull out, or is a body shop my only option?

PDR or don't bother so long as the paint isn't cracked.

That can be pulled out, that piece is replaceable as well If needed but you can likely get it fixed without too much fuss. It could have been worse.

not sure how you plan to get in it to do PDR, thats definitely the rocker...
you may be able to get in it by removing the gromet behind the fender, But you'll have to drop the bumper, Headlight and headlight support to pull the fender off to access this grommet

For whatever it is worth, you are not alone. I did the same thing and took it to a body shop where they fully repaired it. But, because my jackstand rolled over, I also put a dent under the car into the floor panel. It's only one inch across and only seen from beneath the car but it is my full-faced, badge of folly.

If I may offer a low budget cosmetic approach. The reason I suggest this is that spot is one of the least likely to be noticed by anyone but you. It is at the bottom edge. Not just a panel bend but it does go deeper as Decoz stated. The problem is the bottom edge can catch your eye.
Fill it with Bondo and rattle can paint match spray it. Buff it out. I am talking about a very small repair here, not some giant panel respray.
If you don't like that, ignore it. Review threads on proper location for lifting/jacking.
If that does not appeal to you, open your wallet and/ or your work schedule.
