Ideal Highway/Freeway speed
As long as you're at a speed where sixth gear can be comfortable, then it's all about wind resistance. The faster you go, the more resistance, the lower the MPG. I've also found that riding at highway speeds with the top down drags the mileage down more than leaving the top and windows up and running the A/C. But I didn't buy this car to drive it with the top up!
So my suggestion for best mileage -- 65 - 70 mph, top/windows up, A/C off.
How do I drive on the open road? 75 - 80 mph, top down, big smile on face!

21.7 mpg on my last trip to Detroit. AC was off , it was about 10pm with cool air and not much traffic.
Cruise set at 99 and played with the gas pedal all the way. Kepped her under 130 most of the time(I may be dreaming again, you decide).
Ohhhhh and made Killer time

Some data from a recent two week trip through the Rocky Mountains and on the Canadian prairies four lanes.
Starting with the Canadian version:
- top down, 120 km/hr => about 32 - 34 mpg
- top up, 120 km/hr => about 36 mpg
- top up, 90 - 100 km/hr => one tank at 42 mpg
Translation
- top down, 75 mph => about 27 mpg
- top up, 75 mph => about 30 mpg
- top up, 60 mph => believe it or not a genuine 35 mpg
What was I doing with the top up? Sad to say, it was raining.
What was I doing at 60 mph average for a tank of gas? Two lane road, heavy traffic including mucho RVs, heavy policing in British Columbia.
But still a great road trip! Don't let anyone tell you a trip in the S is anything but a blast!
