Oil Temperature Gauge
When you let your engine warm up to its optimal temperature, that is when the entire engine is sufficiently warmed, not just the oil. If the oil is ready to go, but the rest of the engine is still cold, should you be able to get on your car then?
No.
Oil flows at lower temps than you think. If you are happy with the 3 bars that comes from the factory, then stay with that. Oil temp is going to tell you nothing, and it definately won't tell you when your car is ready to be run hard. The problem with the 3 bars, is no one knows what the proper coolant temperature is (degree-wise), and that's what it measures, and that is when the car allows you to get in VTEC zone. Reread my previous post on this topic, and you should see the logic.
But if not, go ahead and get the oil temperature gauge then, it seems like your mind is made up on it. But if you are serious about monitoring the vitals of your engine on one of Mobile's 100F days with 95% humidity, I'd be much more interested about coolant temperature.
It's kind of funny, the 67 Camaro (500 h.p. and a 250 h.p. nitrous kit) that my roommate has only has a coolant temp and oil pressure gauge, as does my friend's 69 Pro Street Camaro with a big block and blower (it runs in the 7s).
Maybe I should tell them that they should get the oil temperature gauge and that their watching of the oil pressure and coolant temperature is not a good indicator. After all, the motor in the '69 Pro Street cost more than my ENTIRE S2000 did.

I would be very interested in getting oil pressure and temperature gauges. How tough would it be to install something like this:
