I am thinking of converting the 2000/1 Black / Red interior Door Panel to the 2004/5 Back Red Door panel. Does anyone know if the red color is the same for these parts? It is hard to tell from the parts description.

Yes it definitely will. I replaced my 02 s2k w/ 04 black interior panels. I have more width room now. It's a simple remove/install. No mods needed. Do you have door tweeter connections? If not you will have a grille with no tweet. I was able to buy a pair on ebay for 199.00 w/ all the electronics for the windows and tweeters. Good luck!!!
