The reason you are finding full red is because they went with full red on the 02-03 years. 00-01 are not full red. AP2 04 and up you can get silverstone with black red. GPW then went with tan and black interior eventually going to all black. I think in 06 GPW once again got red and black as an option as well as just all black. Berlina got red and black again in 08. I am going off of memory here so someone feel free to correct anything...
Honda's absurdly limited choices of colors for almost all their vehicles has always been a wonder to me.
Especially in something like the S2k. For example, I have the Silverstone/Red and I like the color but for a convertible I see difficulties with top down & black seats unless it is cloudy all day where you live. That is about all the S2000 offered with a few exceptions.
I would like to have traded the 01 several years back but not having any other colors to choose from was in part what made my keep the car another year.
I have always loved Ferrari Red with Saddle/Palamino seats (and roof?????).
What does Honda do, Red/Black, Black/Black, Silver/Black, repeat, repeat, etc. Rather unimaginative in MHO.
I suspect they have lost more sales than they think with their "any color as long as its black" "the car speaks for itself" mentality.
And what ever happened to British Racing Green? Maybe with Saddle as well hummm.
I know us S2000 lovers will never get the opportunity to witness what amazing variety of color combos the S2k would have looked look really good in.
Don't rule out swapping interiors. MY02 GPW only came will full red but MY03 came w/tan & black so you could swap the tan pieces for red (really only 4 components - door insert, seat, console and carpet). MY02 BB came in both full red and full black so again, you could find one with full black and switch out. Some work but possible. OK, time to whore my interior swap a bit:

I think this has to do with American Honda liking to play it a little too safe. No matter what, a black interior is the least offensive and easiest to sell. I've lost count of how many times I've met someone who didn't like a tan or light-colored interior. Plus, limiting the color combos is probably cheaper in terms of logistics, especially for a low volume car such as this (some bean counters can probably confirm that).
In Japan, you had the choice of any color combo for the S2000 with whatever interior and exterior colors were available at that time for the car (lime green exterior with blue interior, the McDonald's special of yellow exterior with red interior, etc.). Besides wishing that they didn't drop tan from the US lineup, I also wish they brought over the brown interior that they introduced in '08. I probably would've bumped LBP back to my 1st choice if it was available with the brown interior. I just didn't want an all black interior; it's too boring.
