Shipping s2000
I've used both Intercity and Reliable; Horseless Carriage is another reputable one. They all have websites and will provide free quotes.
Also when you take delivery of the car pay close attention to everything and make sure you got it in good condition before you sign the delivery paper. When I got my s shipped the truck got to my house late at night and they had wrapped my s in plastic to "protect" it. Well it did the complete opposite, they tightened the plastic too much on the front fender/hood and it scratched up all the clear and it looked dull, almost matt grey but all scratched. I didn't pay attention to it thinking it was just dirty, next day I washed it and saw all the damage but it was too late to make an insurance claim with the shipping company so they could repair it because I signed the paper on delivery stating it was good, oh well. Just pay attention to EVERYTHING.

I prefer USPS, because then I can put all my drugs in the car. Private couriers can inspect a suspicious package, but USPS requires a warrant to open a package. Gotta love when government red tape makes illegal activity easier.
I used High End Transport, regular open-top truck, to ship from AZ to MD. Good experience. Most budget shippers contract individual truckers to do the shipping, so if you use one of these guys (HET does this), make sure you request to have the car sit at the top of the truck to avoid oil dripping on to the roof.
If your budget is higher, i.e., >$2000 for cross-country, a covered truck would be ideal. From what I understand, trucks at this price-point are typically owned and operated by the shipping companies themselves, so there's less risk involved.
